Adorable Spider Cupcakes

These adorable spider cupcakes with a brownie base and cream cheese frosting are super easy to make and absolutely delicious!


As I've mentioned before, I love a good brownie, and believe that you can never go wrong with Oreos in desserts. I've added a link to my brownie recipe. If you prefer a different cupcake base, you can try just about anything!


*Be sure to use gel food colouring instead of liquid food coloring. The liquid isn’t as concentrated, so you usually need to use more, and this extra liquid could alter the consistency of your frosting.




INGREDIENTS:


  • 1 1/2 cups granulated sugar

  • 1/2 cup powdered sugar

  • 3/4 cup all-purpose flour

  • 2/3 cup cocoa powder

  • 1/2 cup chocolate chips (I prefer dark)

  • 3/4 teaspoons salt

  • 2 large eggs

  • 1/2 cup extra-virgin olive oil

  • 2 tablespoons water

  • 1/2 teaspoon vanilla


Frosting recipe:

  • 8 ounces (225 grams) cream cheese, at room temperature

  • 1 1/4 cups (140 grams) powdered sugar

  • 1/3 cup (80 ml) heavy whipping cream



For the decorating:

  • 6 Oreo cookies

  • 24 candy eyes

  • a few drops of black gel food colouring (to add to some of your frosting, for the spider legs)

  • your creamy frosting

  • 2 Ziploc bags to use for piping (you can also use piping bags)




STEPS:


Preheat oven to 340°F and grease 12 muffin cup baker- set aside.


  1. Prepare brownie mix (see my ‘The best homemade brownies’ recipe: https://www.eatingwithhouri.com/post/the-best-homemade-brownies).

  2. Once the brownie cupcakes are cooled, begin the decorating.

  3. To make the frosting: Mix cream cheese, powdered sugar, and heavy cream.

  4. Spread about 2 tablespoons of frosting over each cooled cupcake.

  5. Take apart the Oreos. You don't need the centres.

  6. Place one side of the Oreo cookie on your cupcake, on top of the frosting.

  7. Pipe 4 legs on both sides of the Oreo. Use your black frosting (mix black food colouring with some of your creamy frosting).

  8. Pipe a tiny bit of frosting on the bottom of two eyes and place on the Oreo.

  9. Don't decorate your cupcakes until a few hours before serving them, as the Oreos get soft over time. decorated cupcakes refrigerated for one day
