Baba ganoush is one of those foods that I love to eat often, but I rarely made it at home. That all changed a few months ago. Honestly, every time I’ve made baba ganoush lately, I haven’t been able to resist eating it by the spoonful standing at the kitchen counter. It’s creamy, garlicky, lemony, and it has a nice nuttiness thanks to the tahini.
Baba ganoush is such a delicious, wholesome food. I believe that the addition of baked eggplant not only adds an amazing layer of flavor, but it also adds lots of nutrients as well. Baba ganoush is very versatile, it’s best served on a platter with warm pita and crisp veggies.

INGREDIENTS:
1 eggplant
1/2 teaspoon of salt
2 tablespoons of olive oil
4 tablespoons of tahini
3 garlic cloves (grated)
1/4 teaspoon of cumin
1/4 teaspoon of smoked paprika
1/2 lemon
STEPS:
Cut the eggplant in half lengthwise, and sprinkle with salt.
Place the eggplant halves in the air fryer, face up. Set the air fryer temperature to 400 F and the cook time to 20 minutes.
When the eggplant is done cooking, let it cool for 10 minutes.
Scoop out the cooked eggplant into a bowl or plate, and add the salt, olive oil, tahini, garlic, cumin, smoked paprika, and lemon juice. Use a fork to mash it all up together.
Enjoy it with pita bread, pita chips, rice crackers, or whatever your heart desires!
