Do you have leftover eggnog from the holidays? Well I found an entire carton hidden in the back of the fridge with just a few days left before expiry, so I had to find creative ways to use it up! These cake-like Eggnog Muffins are perfect to use up any leftover eggnog you may have. And if you don’t have any leftover, go buy some, you’re going to want to try these, they’re delicious!
The texture of these muffins is quite similar to a tasty coffee cake. It has the deliciously rich flavour of the eggnog with an added layer of flavour from the streusel topping. The topping really ties all the favours together so nicely.
I love the classic muffin recipes during the holidays but it’s always so fun to add a new flavour to the mix like these! This is a pretty straightforward muffin recipe with an easy streusel as an extra bonus. You can enjoy them for dessert, or snack, or even breakfast.
These Eggnog Muffins are super moist and delicious. You have to make them! Give my recipe a try, even if you don’t like eggnog, you will fall in love with these!
INGREDIENTS:
For the Batter:
2 heaping cups of flour
1/2 cup of granulated sugar
2 teaspoons of baking powder
1/2 teaspoon of pumpkin pie spice
1 teaspoon of cinnamon
2 large eggs
1 cup of eggnog
1/2 cup of butter, melted
1 teaspoon of vanilla
For the Streusel Topping:
1/3 cup of flour
1/3 cup of granulated sugar
2 tablespoons of cold butter, cut up into small pieces
STEPS:
Preheat your oven to 375 degrees F. Spray your silicon muffin tin or line a regular one with paper liners- set aside.
Add the flour, sugar, baking powder, cinnamon, and pumpkin pie spice to a bowl and mix until combined.
In a large bowl, whisk together eggs, eggnog, butter, and vanilla. Add flour mixture to the egg mixture; stir just until combined (don’t over-mix). Spoon the batter into the prepared muffin cups, filling each three-quarter of the way full.
Make the Streusel topping: stir the flour and sugar together in a small bowl. Use your hands to cut in the butter until the mixture resembles coarse crumbs. Sprinkle the topping over muffin batter.
Bake for 20 minutes or until a toothpick inserted into center comes out clean.
