I feel like everyone has their own favorite way of making instant noodles/ramen. To be honest, I think instant ramen is an amazing invention! Who among us doesn't have at least one trusty pack of instant ramen noodles somewhere in the pantry/cupboard?? I’m here to show you how those cheap instant noodles can be dressed up with a few simple ingredients for a fancy, ‘healthier’ version of that same quick and easy meal.
One thing I like to do that elevates the flavour of the broth is to add some garlic when I’m making my instant ramen. Then, I like to slide in some delicious jammy hooked eggs into the hot broth, along with some cooked chicken. Ramen topping options are endless! Here are some of my favourites: chili crisp oil, eggs, sautéed bok choy, sautéed mushrooms, sheets of nori, fish cakes, bean sprouts, cooked chicken. Depending on what toppings you add, you can quickly transform your bowl of soup into a full, delicious, belly-warming meal! My mom likes to top hers with freshly squeezed lemon juice, she tops most meals with that!
Tonight, my son was talking about how a bowl of instant ramen noodles is the ultimate quick & cheap comfort food. He’s already thinking of how he’ll be eating these as a university student on a limited budget, and how he’ll be able to make ramen into a more elevated meal with my tips!

INGREDIENTS:
1 pack of the instant soup/ramen of your choice (my favourite one is Beef flavoured Nissin Instant Noodle)
1 teaspoon of sesame oil
1 clove of garlic, minced
1/2 teaspoon of fresh ginger, minced
2 hard boiled eggs (I like the yolks a bit jammy)
1/2 cup of cooked chicken (I like to use leftover rotisserie chicken)
Optional: cooked before of your choice (my favourites are mushrooms & bok choy)
STEPS:
Cook your ramen according to the package: boil 500ml of water, with your minced garlic & ginger. Once boiling, add the noodles and cook for 3 minutes.
Add any cooked vegetables you’re using and boil for another minute.
Pour your soup into a big bowl and mix in the sauce packets, along with your sesame oil.
Add your cooked chicken and eggs to your soup. For an extra crunch you could top it with sesame seeds, or fresh green onions, or crispy onions, or anything else you’d like!
