Ginger Carrot Salad Dressing (Japanese restaurant style)

This is one of my all time favourite salad dressings! My go to sushi restaurant in South Florida got me hooked on this dressing decades ago, and I’ve been trying to replicate it since! Follow my simple steps to make this delicious Japanese Ginger Carrot Salad Dressing in just a few minutes! The sweet and tangy flavors make the perfect pairing to any salad. You will love the savory undertone from the soy sauce and that pop from the vinegar and fresh ginger! The best part- you don’t even need to use a blender!


INGREDIENTS:


- 3 tablespoons of finely grated ginger (more of you like spice!)

- 1 cup of finely grated carrots

- 1 & 1/2 tablespoons of granulated sugar

- 1/4 cup of soy sauce

- 1/2 cup of white vinegar

- 1/3 cup of any vegetable oil (I use EVOO)

- 1/3 teaspoon of salt



STEPS:


  1. Add all the ingredients to a bowl and mix.

  2. Serve with your favourite salad. I like it best with cold iceberg lettuce.

  3. Bon appétit!
