Mango Shrimp Salad



This Mango Shrimp Salad will quickly become your favourite summer salad! The sweet, juicy ripe mango pieces tossed with plump, succulent shrimp pieces and crispy cucumbers is just the perfect harmony of flavours! The delicious homemade creamy chili dressing ties it all in perfectly. You will definitely make this tasty salad again and again! You can enjoy it as a side salad, or as your lunch or dinner.


I have to say that my favourite part of this mango salad is the delicious dressing. I’ve always been obsessed with sauces and salad dressings. I like making extra dressing to use as a dipping sauce for veggies and other salads.


This Mango Salad recipe is delicious, fresh & healthy, and can be thrown together very quickly. This is a delicious salad and sure to become one of your favourites this summer! Give my recipe a try, you’ll love it!




INGREDIENTS:


  • 10 larger, cooked shrimp, cut coarsely

  • 2 small (Persian) cucumbers, diced

  • 1 mango cut into cubes

  • 7 green onions thinly sliced (mainly the top white parts)



INGREDIENTS for the delicious creamy dressing:


  • 1/2 cup of mayonnaise

  • 2 tablespoons of garlic chili sauce

  • 2 tablespoons of lemon juice




STEPS:


  1. Let’s start by making the delicious dressing: Mix the mayonnaise, garlic chili and lemon juice together and set aside.

  2. Add the cubed mango, diced cucumbers and sliced green onions to a bowl.

  3. Top with the shrimp.

  4. Drizzle it all with the creamy garlic chili dressing.

  5. Enjoy! Bon appétit!
