The Best Shepherd’s Pie


Shepherd's Pie: basically a beefy pot pie with mashed potatoes on top instead of a crust! Who doesn’t love mashed potatoes? I had lots of ground beef in the fridge so I decided to make my delicious & quick go to recipe on this busy night. Shhhh- I used instant mash! Guess what? It turns out great either way! You can have this delicious meal ready in like 30 minutes!


Making the best Shepherd’s Pie is not difficult.  But, there are a few steps to it.  I promise, they’re not difficult. You have to make the meat mixture, the mashed potatoes, then assemble the casserole, and bake it. Easy peasy ;)


You could also make the whole recipe ahead of time, part by part- so cook the meat and cook & mash your potatoes and keep it all in the refrigerator until you are ready to assemble and bake it.  I recommended baking it within 3 days of preparing the ingredients.


This easy Shepherd’s Pie literally checks all the boxes for a classic comfort food dinner. The base is a simple mix of ground beef, soup & veggies, then it’s topped with creamy, fluffy mashed potatoes that form a golden crust…and mashed potatoes make everything better, don't they? Give my recipe a try, you won’t be disappointed.





INGREDIENTS:



  • 2 pounds of lean ground beef

  • 1 small onion, chopped

  • 1 can of Campbell’s Cream of Mushroom Soup

  • 2 tablespoons of ketchup

  • 1 can of corn (or any other of your favorite cooked/canned vegetable combination

  • Salt & pepper to taste






STEPS:



  1. Preheat the oven to 400°F. 

  2. Cook the beef and onion over medium-high heat until the beef is well browned, stir often. Pour off the fat.

  3. Add salt & pepper, soup, ketchup and corn to the cooked beef. Mix until well combined.

  4. Spread the mashed potatoes over the beef mixture.

  5. Bake for 20 minutes - broil for an extra 5 minutes until the potatoes are lightly browned.

  6. Voilà! Bon appétit!
