If you’re like me, and love a good old fashioned soft & chewy sugar cookie, than this recipe is for you! I’ve tried out so many variations to this recipe, but they’ve never been just right. I’m happy to say that the cookies this recipe yields are simply amazing! These sugar cookies are are soft, chewy and irresistible!
INGREDIENTS:
1 and 1/4 cups of all-purpose flour
1/2 teaspoon of baking soda
1/4 teaspoon of baking powder
1/4 teaspoon of salt
1 cup of unsalted butter (softened)
1/2 cup of granulated sugar
1 tablespoon of brown sugar
1 egg
1 teaspoon of vanilla extract
+1/4 cup sugar (for rolling dough balls in)
STEPS:
Preheat the oven to 350°F. (I line my baking sheets with silicone baking mats.)
Mix the flour, baking soda, baking powder and salt in a medium sized bowl and set aside.
Mix the butter and sugars together in a large mixer bowl until it becomes a fluffy consistency. You will notice the colour and texture change.
Add the egg and mix well.
Add the vanilla extract and mix again.
Add in the dry ingredient mixture and mix until the dough is well combined. It shouldn’t be too sticky.
Create 1 tablespoon sized balls of cookie dough. Roll into a ball, then roll each ball in the extra 1/4 cup of sugar to coat. Set the balls on the baking sheet.
Bake cookies for 9 minutes. The cookies will spread a bit but will still be soft. Remove them from the oven just before the edges begin to turn golden. The cookies come out looking a bit puffy at first, but will fall a bit as they cool.
